Every Sunday we go to my parents. It's a great way to end (or start) the week and both Rich and I always look forward to it. Not only is it lovely to spend time with my family in a non-work environment (I work with both my brother and father) but I especially look forward to seeing my Mom, who I am super close to. It's also great because she is one Hell of a cook and Rich and I love to eat!
This past Sunday she was raving about this Pioneer Woman (her new favorite cooking muse) recipe that we had to make. It's a fig pizza and at first I was a little skeptical but -obvi-, it ended up being delicious and I had to share!
We adapted the recipe a little from Pioneer Woman's original because we didn't have any prosciutto, but we did have pancetta so we used that. Also we used ready made pizza dough, SO EASY.
INGREDIENTS:
1 bag of ready made pizza dough
2 tablespoons olive oil
4 tablespoons fig spread
12 ounces of fresh mozzarella
1 package (4 oz.) of diced pancetta
1 bunch of argula
1/2 cup shaved parmesan
salt and pepper to taste
DIRECTIONS:
Preheat oven to 500 degrees
Generously flour your pizza dough and the flat surface you will be working on
Roll the dough out as thinly as possible and place on a baking sheet/pizza stone
Drizzle olive oil on the dough and sprinkle lightly with salt
Spread the fig spread all over the surface of the dough
Lay sliced mozzarella all over the surface of the pizza
Sprinkly lightly with salt and fresh ground pepper
Bake 12-15 minutes until crust is golden/cheese is bubbly
While the pizza is baking, fry up the pancetta
Remove pizza from the oven and sprinkle pancetta on top
Sprinkle on argula and fresh parmesan shavings
Cut up how you desire and ENJOY!
