There's only one thing I like more than going to brunch, and that's brunch coming to me. So when my girlfriend Amy awakens me by text on a Sunday morning that she's coming over to make stuffed french toast, my natural response? "I have the champagne."
INGREDIENTS:
1 loaf baguette
1 container (8oz) of whipped cream cheese
1 container (8oz) of mascarpone
3/4 cup of milk
4 eggs
Ground cinnamon (to taste)
1 tsp vanilla
2 tsp sugar
1 container of strawberries
1 container of raspberries
whipped cream
DIRECTIONS:
Cut up strawberries and put in a bowl with raspberries. Mix/mash in the sugar and put to the side.
In a medium size bowl, add eggs, vanilla, milk and whisk. Add cinnamon and continue whisking until well blended.
In a separate bowl, mix the mascarpone and whipped cream cheese. Slice your baguette in half and spread the cream cheese mixture along the length of the bread. Top the bread with the berry mixture (be sure to save some for a topping). Then sandwich the bread and cut into desired serving size.
Heat skillet and melt butter. Dip slices of bread into the egg mixture and let the bread soak it up. Put in the pan and cook for 5-10 minutes then flip.
Top with syrup, whipped cream, and some of the extra berry mixture. Pour yourself another bellini, and indulge.
Now go do some squats to make yourself feel better.
